Layered Leeks and Potatoes Italienne

Description One would think leeks, potatoes, garlic and sage would not marry well. The truth is the flavors blend beautifully.
Ingredients

4-6 as side dish
  • 2 lb potatoes, thinly sliced
  • 1 large or 2 small leeks, trimmed, washed and thinly sliced
  • 2 garlic cloves, thinly sliced
  • 4 oz mozzarella, sliced
  • 1 bunch sage, shredded
  • 1 cup thin cream
Methods/steps
  1. Preheat oven to 400° F (200° C).
  2. Layer potatoes, leeks, garlic and sage in a greased ovenproof dish.
  3. Pour cream over the top and bake for 30-40 minutes, until the potatoes are tender.
Additional Tips

If you find the flavor too mild, substitute cheese sauce for cream.

To prepare layered leeks and potatoes French style, skip mozzarella, sage and garlic, and substitute light cream with blue cheese sauce.
