Thyme Flavored Braised Veal

Description Veal is a very lean meat and it can be very bland. Thyme adds depth of flavor to many Mediterranean dishes, such as this veal hotpot.

  • 2 lbs loin or leg of veal
  • 1 Tbs flour
  • 1 Tbs butter
  • 1/2 cup white wine
  • 2 cups boiling water
  • 1/2 lemon, juice and rind
  • 1 sprig thyme
  • salt
  • pepper
Methods/steps
  1. Sprinkle the veal piece with salt and pepper.
  2. Heat the butter in a large pan. Dip the meat in the flour then brown in the hot butter.
  3. Add the wine, boiling water and lemon juiice, and sprinkle with the lemon rind. Cover and simmer for 40 minutes or until the meat is tender.
  4. Serve sliced with its own gravy on the side.
