Apple and Sausage Stuffing

Description This stuffing is very quick to prepare as it is not cooked.
Ingredients

  • 1 large cooking apple, peeled, cored and chopped
  • 1/2 lb sausage meat or ground pork meat
  • 2 tsp dried herbs (parsley, thyme, sage, lemon balm or your choice)
  • salt and pepper
Methods/steps
  1. Place all ingredients in a bowl. Mix well.
  2. Use this mixture to fill the neck end of the bird.
  3. Alternatively, shape into balls and  cook in an oven pan, in a rack under the roast, for 30-40 minutes.
Additional Tips
Use the stuffing before there is any discoloration in the apple.
