Asparagus Mimosa
Ingredients
- 8 oz fresh asparagus
- salt
- ground black pepper
- 2 Tbs butter(sub for a vegan butter) melted
- a squeeze of fresh lemon juice
- 1 Tbs fresh chervil chopped
- 2 eggs, hard boiled and chopped (optional)
Methods/steps
- Trim and peel asparagus
- Ppoach the spears in lightly slated water until just tender, 3-6 minutes.
- Ddrain and place in serving dish, season to taste.
- Melt butter with the lemon juice, trickle over the asparagus, sprinkle with the egg if using, garnish with the chervil. Serve warm.
