Asparagus Mimosa

Description A vegetable side dish that can be easily made vegan.

  • 8 oz fresh asparagus
  • salt
  • ground black pepper
  • 2 Tbs butter(sub for a vegan butter) melted
  • a squeeze of fresh lemon juice
  • 1 Tbs fresh chervil chopped
  • 2 eggs, hard boiled and chopped (optional)
Methods/steps
  1. Trim and peel asparagus
  2. Ppoach the spears in lightly slated water until just tender, 3-6 minutes.
  3. Ddrain and place in serving dish, season to taste.
  4. Melt butter with the lemon juice, trickle over the asparagus, sprinkle with the egg if using, garnish with the chervil. Serve warm.
