Bacon and Celery Stuffing

Description This recipe is good for those birds that bring ghe giblets inside.

  • 2 slices smoked streaky bacon, rind removed and chopped
  • 2 sticks celery, chopped
  • 1 1/2 Tbs butter or cooking oil
  • 1 chicken liver, prepared and chopped
  • 2 Tbs fresh white bread crumbs
  • salt and pepper to taste
Methods/steps
  1. Melt butter in a pan. Add bacon and celery. Cover and cook for 4-5 minutes.
  2. Add chopped chicken liver and bread crumbs to the pan. Season to taste.
  3. Cook 1-2 minutes more. Allow to cool before filling the neck cavity with this.
Additional Tips
This recipe should be enough for one 4-5 lb chicken.
