Banana and Carrot Cake

Ingredients

  • 1 cup wholemeal flour
  • ½ cup brown sugar
  • 2 mashed bananas
  • 1 cup grated carrots
  • 175 ml sunflower oil
  • 2 Tbs raisins
  • 1 tsp ground mixed spice
  • 2 tsp baking powder
For the icing
  • ½ cup confectioner’s sugar for icing
  • grated rind and juice of 1 orange
  • Methods/steps
    1. Preheat oven to 350°F (180ºC).
    2. Place all the ingredients for the cake in a bowl and mix until smooth.
    3. Turn into a 7-inch round prepared cake pan. Smooth the surface.
    4. Bake in the middle rack for 60-75 minutes.
    5. Prepare the icing once the cake has cooled. Mix confectioner’s sugar, orange zest and juice until smooth. Spread over the top.
