Basic Savory Batter

Description

Savory coating batter is similar to pancake batter, but thicker, with less liquid.

Use this batter to coat fish, meat, poultry and vegetables.

  • 1/4 lb plain or self raising flour (4 oz or 4 heaped Tbs)
  • 1/4 level tsp salt
  • 1 medium egg
  • 1 Tbs melted butter or oil
  • 1/2 cup milk
Methods/steps
  1. Sift flour and salt into a bowl. It will incorporate air into the flour and the batter will be lighter.
  2. Add egg, butter and milk. Beat to smooth creamy batter.
  3. Use it as required in your recipe.
Additional Tips

Substitute milk with water, sparkling water or beer. Experiment, you'll get surprising results.

Substitute egg with 2 egg whites. Whisk them to stiff snow peaks for even lighter results.

Spice up the batter with pepper, mustard, curry powder, or seaweed salt.
