Bubble and Squeak

  • 2 tablespoons vegetable oil
  • 1 large yellow onion, coarsely chopped
  • 1 small cabbage, coarsely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried marjoram, crumbled
  • 3 cups coarsely chopped leftover pork
  • 2 cups leftover mashed potatoes
Methods/steps
  1. Preheat your oven to 425F. Heat 1 tablespoon of the oil in a 12-inch skillet, it should be oven proof. Heat over a medium flame for 1 minutes. Saute the onions for 7 minutes, st iring frequently. The onions should be golden
  2. Mix in the cabbage, salt and marjoram along with the remaining oil, toss lightly, and reduce heat to low. Cover and cook until the cabbage is wilted, 7 minutes.
  3. Stir in the beef and potatoes, and place into the oven. Bake uncovered for 20 minutes.
Additional Tips

To brown the top, place in your broiler for a few minutes.
