Classic English Potato Salad

  • 1 1/2 lbs new potatoes
  • 2 tablespoons mayonnaise
  • 2 teaspoons creme fraiche (or sour cream)
  • 2-3 teaspoons chopped chives
  • 2 tablespoons freshly chopped parsley
  • 1 tablespoon freshly squeezed lemon juice
  • Freshly ground black pepper
  • Salt to taste
Methods/steps
  1. Wash and peel potatoes. Cut into chunks and cook in a large pot of salted water until tender, not mushy, less than 15 minutes. Drain and allow to cool. Place into a bowl.
  2. Mix in the mayonnaise and creme fraiche. Carefully mix in all the ingredients, salt and pepper to taste.
  3. Serve cold
