Classic English Potato Salad

Ingredients
- 1 1/2 lbs new potatoes
- 2 tablespoons mayonnaise
- 2 teaspoons creme fraiche (or sour cream)
- 2-3 teaspoons chopped chives
- 2 tablespoons freshly chopped parsley
- 1 tablespoon freshly squeezed lemon juice
- Freshly ground black pepper
- Salt to taste
Methods/steps
- Wash and peel potatoes. Cut into chunks and cook in a large pot of salted water until tender, not mushy, less than 15 minutes. Drain and allow to cool. Place into a bowl.
- Mix in the mayonnaise and creme fraiche. Carefully mix in all the ingredients, salt and pepper to taste.
- Serve cold
