Coriander and Yogurt Sauce

Description Serve coriander and yogurt sauce with poached or boiled fish and grilled chicken.

  • 1 onion, chopped   
  • 2 Tbs oil   
  • 1 tsp ground coriander   
  • 1 garlic clove, finely chopped   
  • 1 cup plain yogurt   
  • 2 sprigs fresh coriander   
  • 1/2 cup sour cream   
  • salt to taste
  • pepper to taste
Methods/steps
  1. Heat oil in a pan over low heat and sauté onion until soft, add ground coriander and garlic and cook for 2-3 minutes more.
  2. Remove from heat, add yogurt and coriander leaves. Puree until smooth with the hand blender or in a food processor.
  3. Return to the heat, add sour cream, season and warm the sauce but don't let it boil.
