Creme Brulee

Description A lovely custard with t caramelized sugar.

  • 4 vanilla pods, seeds only
  • 3 egg yolks
  • 2/3 cup sugar
  • 1/2 cup milk
  • 1¼ cups cream
Methods/steps
  1. Preheat oven to 210°F.
  2. Beat egg yolks with 1/3 cup sugar. Add the vanilla seeds.
  3. Take the cream to boiling point and pour over the egg mixture, stirring continuously.
  4. Distribute the custard among 4 individual heat resistant pots. Place the pots inside an oven pan and fill the pan with water up to half the height of the pots.
  5. Cook in the oven for 45-50 minutes, just until the custard is set.
  6. Sprinkle the rest of the sugar on top of the pots. Place under the broiler for a few minutes, until the sugar turns to caramel.
