- 3 zucchinis
- 1/2 cup plain yogurt
- 1 cup light cream
- 1 tsp curry powder
- Salt and pepper to taste
- croutons for garnishing
Methods/steps
- Peel and dice zucchinis. Simmer until tender, 10-15 minutes, in 2 cups water.
- Add yogurt, cream, curry powder and blend until smooth. Chill in the fridge until ready to eat.
- Garnish with croutons and serve.
