Curried Zucchini Cream

  • 3 zucchinis
  • 1/2 cup plain yogurt
  • 1 cup light cream
  • 1 tsp curry powder
  • Salt and pepper to taste
  • croutons for garnishing
Methods/steps
  1. Peel and dice zucchinis. Simmer until tender, 10-15 minutes, in 2 cups water.
  2. Add yogurt, cream, curry powder and blend until smooth. Chill in the fridge until ready to eat.
  3. Garnish with croutons and serve.
