Exotic Barbecued Chicken

Description Chicken drumsticks marinated in a spiced blend of mango chutney and olive oil.

8 chicken drumsticks, skinned   
Marinade   
  • 2 Tbs mango chutney   
  • 1/3 cup olive oil   
  • 2 Tbs tomato paste   
  • 2 Tbs Worcestershire sauce   
  • 1 tsp ground nutmeg   
  • 1/2 tsp anchovy paste   
  • 1 pinch cayenne pepper  
  • salt   
  • pepper
Methods/steps
  1. Prepare the marinade by mixing all the ingredients in a bowl - chop small any large pieces in the mango chutney.
  2. Slash the drumsticks several times diagonally. Brush with the marinade introducing it into the cuts. Brush or spray the rack with oil and arrange drumsticks on top.
  3. Place rack at 4 inches (10 cm) from the source of heat. Broil, grill or barbecue , turning and basting with the marinade frequently, for about 10-12 minters on each side or until tender inside and browned outside.
  4. Serve hot or cold.
