French Apple Cake

Description This French apple cake is OK for a vegetarian, not a vegan.

  • 1 lb cooking apples, cored and chopped
  • 1 cup self-rising flour
  • 1 tsp baking powder
  • 2/3 cup superfine sugar
  • 6 tablespoons milk (or soy milk)
  • 4 tablespoons butter, melted (or vegan substitute)
  • 3 eggs
  • 1 tsp fresh nutmeg, grated
Topping
  • 6 tablespoon sunflower margarine
  • 1/2 cup superfine sugar
  • 1 tsp vanilla extract
  • confectioners sugar to dust
Methods/steps
  1. Preheat your oven to 325°F. Grease a 9 inch round cake pan, a deep one, and line with waxed paper.
  2. Pplace the chopped apples on the bottom of the pan.
  3. Place all ingredient, minus 1 egg, into a food processor. Beat until smooth.
  4. Pour the smooth batter over the apples, use the back of a spoon to smooth out the top, bake for 40-45 minutes. It should be a light golden color.
  5. Wwhile cake is cooking, cream the topping ingredients together with the 1 egg. Remove the cake from your oven, and spoon the topping over it.
  6. Return cake to oven and bake for an additional 20-25 minutes. The cake should be a golden brown color. Allow cake to cool, and turn it out before dusting with the confectioners sugar.
Additional Tips

You can replace the apples with a number of other hard fruits, or raspberries.
