Additional Tips

in some cases, we bow to convenience. Frozen peas is one of them. We love fresh peas on the pod. We use them while in season and we can find them in the stores; this is not very often. We use organic frozen peas most of the time.

Make this recipe dairy and milk free by substituting butter with 1-2 Tbs vegetable oil. Making it dairy free also makes it adequate for the most strict vegetarians. As it is, it would suit those who don't eat meat but allow dairy -milk, yogurt, cheese- in their diet.
