Fruit Soup

Description If you miss the summer, take advantage fruit is present at the grocery store even out of season, and bring back the summer flavor by adding fruits from the warm season.

  • 3/4 cup roughly chopped strawberries
  • 3/4 cup washed and ready to eat strawberries
  • 2 seedless tangerines, in segments
  • 1 cup blueberries, washed
  • 1/2 melon, cubed
  • 1 kiwi, peeled and cut into pieces
  • ¾ cup sugar
  • 2 Tbs strawberry liqueur
  • 1/3 cup white wine
Methods/steps
  1. Dissolve sugar into 1/2 cup water. Add 1/2 cup of the sweetened water mixture to the white wine and strawberry liqueur. Marinate the chopped strawberries in this mixture overnight in the fridge.
  2. Next morning, pass the marinade through a sieve to remove any bits. Add the rest of the fruit pieces to the liquid and chill thoroughly before serving.

Although this fruit soup is best made with fresh fruit, frozen or canned fruit can be used.

Other berry or fruit liqueurs - blackberry, orange - can be substituted for the strawberry one.

Use a sweet and fruity white wine, try cider or champagne for a different flavor.
