Description Waste not leftover vegetables nor leftover pork as this recipe uses both to make a delicious meal.

  • 2 tablespoons vegetable oil
  • 1 large yellow onion, coarsely chopped
  • 3/4 teaspoon dried rosemary, crumbled
  • 1/4 teaspoon caraway seeds
  • 1/2 teaspoon salt
  • 1/4 cup minced parsley
  • 3 cups coarsely chopped leftover cooked vegetable
  • 2 cups coarsely chopped pork
  • 2 cups finely diced baked potato
  • 1 tablespoon milk
Methods/steps
  1. Heat your oil in a large skillet (non stick preferred). Heat over a medium heat for 1 minute. add the onion, rosemary, and caraway seed and saute for 5 minutes.
  2. Add the slat, parsley, vegetables, pork, potatoes,and milk. Press flat with a spatula. Reduce heat to low, cook uncovered for 15 minutes.
  3. Loosen the hash around the edges and invert onto a serving plate
