Hot Crab Tartare
Description Hot tartare sauce is a rich white sauce enriched with egg yolk and cream, and with finely chopped parsley, capers and pickled cucumbers added.

  • 2 cups cooked, flaked crab meat
  • 2 cups hot tartare sauce, warm
  • 1 Tbs toasted breadcrumbs
  • 1 Tbs butter, melted
  • 1 Tbs finely chopped parsley to garnish
Methods/steps
  1. Add crab meat to the hot tartare sauce and warm gently to almost boiling point -without actually boiling.
  2. Transfer to a slightly buttere shallow oven pan. Sprinkle breadcrumbs and melted butter on top.
  3. Cook under the broiler until the surface begins to brown. Garnish with finely chopped parsley and serve.
