Indian Fried Bread

Description One of the many kinds of bread in India. Apt for vegetarians and easily adapted for the most strict vegan.

  • 2 cups whole wheat flour
  • 2 cups unbleached all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tsp baking soda
  • 2 tsp cumin seeds
  • 2 tsp black mustard seeds
  • 1 tsp fennel seeds
  • 1 lb natural yogurt (can be substituted for a vegan version)
  • 6 Tbs vegetable ghee
  • 5 Tbs sunflower oil
Methods/steps
  1. Mix together the first 8 ingredients. Add yogurt a little at a time until the mix becomes a firm ball of dough. Cover and chill for 2 hours -if the dough is too dry, add a little cold water.
  2. Divide the chilled dough into 24 pieces. roll out each piece into a thin round. Stack them and keep them under a dish towel as you work.
  3. Fry the dough in a large skillet with hot ghee. Start with only a quarter of the ghee and add more as needed. drain on towel.

Full of Flavor
