Irish Potato Salad with Apples

Description The Irish version of a potato salad and most simple: boil, mix and chill. Something to try.

  • 2 pounds red potatoes, halved
  • 1 white onion, diced
  • 5 stalks celery, diced
  • 1 bunch green onions, diced
  • 1 cup mayonnaise
  • I cup diced green apples
  • 1 bunch parsley, leaves chopped
  • Salt and pepper
  • 1/2 cup cider vinegar
  • 1 teaspoon celery seed
  • 1/2 teaspoon cayenne pepper
  • 1 lemon
Methods/steps

Boil potatoes until tender, not mushy. Strain and allow to cool. Mix in all the ingredients, and chill before serving.
