Mighty Mushrooms

  • 1/2 oz dried porcini mushrooms
  • 4 Tbs olive oil
  • 8 oz button mushrooms
  • 4 oz fresh shiitake mushrooms
  • 2 garlic cloves, crushed
  • 2 Tbs ground coriander
  • salt
  • ground black pepper
  • 3 Tbs parsley, chopped
Methods/steps
  1. Soak dried mushrooms in a little hot water, just to cover, for 20 minutes
  2. Using a large saucepan, heat the oil, add all the mushrooms. Stir well and cover. cook gently for 5 minutes.
  3. Add garlic, coriander and season to taste. Cook another 5 minutes. The mushrooms should be tender and the liquid should be reduced. Mix in the parsley and cool slightly.
