Orange, Honey and Mint Terrine

Description Orange, honey and mint terrine is a lovely vegan dessert that is sure to please anyone else.

  • 8-10 oranges
  • 2 1/2 cups fresh orange juice
  • 2 tablespoons honey
  • 4 teaspoons agar-agar
  • 3 tables spoons fresh mint, chopped
Methods/steps
  1. Ggrate the rind of two of the oranges, set aside. Remove the peel and membranes from all the oranges. Slice the oranges thinly, removing pips and saving the juice.
  2. Heat the orange juice, including any that you saved in a medium saucepan with the honey, grated rind and agar-agar. Stirring until dissolved.
  3. Place the orange slices one layer at a time in a 2 lb loaf pan, alternate the layers with the chopped mint. Slowly pour the warm juice over the oranges, tapping the pan lightly to help it settle.
