Peach Salsa

Description Simple food becomes bright and flavorful with the addition of a simple salsa such this peach one.

  • 2 ripe but not mushy peaches, pitted and chopped coarse
  • 1 small red bell pepper, core, seeded and diced
  • 1 small red onion, diced
  • 1/4 cup chopped fresh parsley
  • 1 medium garlic clove. minced
  • 1/4 cup pineapple juice
  • 1 jalapeno stemmed, seeded and minced
  • salt
Methods/steps

Combine all ingredients. Salt to taste. Cover and place in the fridge for 1 hour to 4 days. This allows everyone to mingle a bit.
