Pork with BBQ Sauce

Description This is a great recipe, not the most sophisticated, but it is filling, flavorful and the kind of food everyone loves.

  • 2 tablespoons vegetable oil
  • 1 medium sized yellow onion, coarsely chopped
  • medium sized sweet green pepper, cored, seeded and coarsely chopped
  • 2 cloves of garlic, minced
  • 1 1/2 cups crushed canned tomatoes
  • 1/2 cup BBQ sauce
  • 1/4 teaspoon each dried thyme and basil, crumbled
  • 1/4 teaspoon salt and black ground pepper
  • 1 lbs leftover roast pork cut into strips
  • 10 oz frozen corn kernels, thawed and drained
  • 4 large rolls, split horizontally
Methods/steps
  1. In a medium sauce pan heat oil over a medium heat for 1 minute. Add the onions and green pepper and saute for 3 minutes, stir occasionally. Add garlic and saute for an additional minute.
  2. Mix in your tomatoes, BBQ sauce, and all the herbs and spices. Bring to just a boil. reduce heat and allow to simmer at a slight bubble for 5 minutes.
  3. Add the pork and corn, cover and cook for for 10 minutes. Toast the rolls. Ladle BBQ pork over the tops of the rolls.
