Potato and Radish Salad

Description Root vegetable salads, like this potato and radish, are for the winter.

  • 1 lb new potatoes, scrubbed
  • 3 Tbs olive oil
  • 1 tablespoon walnut or hazelnut oil
  • 2 Tbs wine vinegar
  • 2 Tbs coarse grain mustard
  • 1 tsp honey
  • salt
  • ground black pepper
  • 6-8 radishes, thinly sliced
  • 2 Tbs fresh chives, chopped
Methods/steps
  1. Boil potatoes until only just tender. drain.
  2. Use the oils, vinegar, mustard honey, salt and pepper to make a dressing. Beat well.
  3. While the potatoes are still warm, toss them with the dressing. Set aside for 1 hour.
  4. Mix in the radishes and chill. Toss before serving.
