Potato and Radish Salad

Description
Root vegetable salads, like this potato and radish, are for the winter.
Ingredients
- 1 lb new potatoes, scrubbed
- 3 Tbs olive oil
- 1 tablespoon walnut or hazelnut oil
- 2 Tbs wine vinegar
- 2 Tbs coarse grain mustard
- 1 tsp honey
- salt
- ground black pepper
- 6-8 radishes, thinly sliced
- 2 Tbs fresh chives, chopped
Methods/steps
- Boil potatoes until only just tender. drain.
- Use the oils, vinegar, mustard honey, salt and pepper to make a dressing. Beat well.
- While the potatoes are still warm, toss them with the dressing. Set aside for 1 hour.
- Mix in the radishes and chill. Toss before serving.
