Simple Potato Salad

Description This is a potato salad to eat chilled, a cold potato salad, if you wish.

  • 5 large Yukon gold potatoes, washed but not peeled, and cut into diferent size chunks
  • 6 farm fresh eggs
  • 1 medium white onion
  • 2 tablespoons sweet pickle relish
  • 1 cup organic mayo
  • 2 tbs mustard {or to taste}
  • salt and ground black pepper to taste
  • a pinch of parsley
  • paprika to taste
Methods/steps
  1. Boil potatoes in a large pot, water to cover, until the thickest pieces are soft when pricked by a fork. Drain, and rinse with cool water to stop the cooking process.
  2. At the same time the potatoes are cooking, hard boil the eggs.
  3. Place potatoes into a large bowl. Dice onion, and eggs, and mix with all remaining ingredients.
  4. Place in fridge to chill before serving.

Potato salads are always an appetizing light meal or side dish.
