Spicy Couscous

  • 1/2 tsp Vegetable oil
  • 2 Green onions, chopped
  • 1 Sweet red pepper
  • 1 Garlic clove, minced
  • 2 Tomatoes, chopped
  • 1 Zucchini, diced
  • 1 cup Chick peas, cooked
  • 1 cup Boiling water
  • 1/4 tsp Salt
  • 1/2 tsp Curry powder
  • 1 tsp Ground cumin
  • 2 Tbs Fresh parsley
  • 1/8 tsp Ground cinnamon
  • 1/2 tsp Ginger
  • 1/4 tsp Cayenne
  • 1 cup Couscous
Methods/steps
  1. In a medium-size skillet; heat the oil.
  2. Add green onions, sweet pepper, garlic, tomatoes and zucchini; saute 5 minuntes, stirring.
  3. Remove from heat and keep warm.
  4. In a medium-size saucepan, combine the remaining ingredients .
  5. Mix, cover and let stand 5 minutes, until liquid is absorbed.
  6. Add the first mixture and fluff with a fork.
