Tiramisu with Blueberries

Description Frozen blueberries keep more antioxidant power than dried or canned ones, but all are good to prepare this creamy dessert.

  • 3 egg yolks
  • 8 tsp sugar
  • 1½ lcups mascarpone cheese
  • 2 egg whites
  • 8-12 biscotti or ladyfingers
  • 1 cup strong coffee
  • 2 tsp cocoa
  • 4 Tbs chocolate chips
  • 2 cups blueberries
Methods/steps
  1. Beat egg yolks and sugar until smooth and creamy. Add mascarpone.
  2. Beat egg whites to snow peak consistency. fold into the egg yolk, sugar and mascarpone mixture.
  3. Dip biscotti in coffee and place a layer on each plate. Pour the mascarpone and egg mixture on top. Sprinkle over cocoa and the chocolate chips.
  4. Chill in the fridge for at least 4 hours.
  5. Garnish with blueberries and serve.
Additional Tips

For more flavor add, if you wish, a little amaretto.
