Steamed forced rhubarb
One of the January treats in the UK is forced rhubarb. When the rhubarb plant grows in the dark, the stems are more tender and have a delicate pink color instead of the usual vibrant pink-almost-red. Forced rhubarb is scrumptious. The delicate stems are sweeter than the non forced variety, and don”t require to be peeled.
Cooking forced rhubarb in a microwaveawble steamer is a simple process and well worth trying.
Ingredients
1 cup forced rhubarb, cut into 3/4-inch pieces
1 Tbs brown sugar
2 tsp sunflower oil
1 tsp sugar
1 tsp grated ginger
1 tsp orange zest
- Place all ingredients in a container suitable for microwave and mix.
- Cover with the lid or with film -pierce the film 2-3 times to let the steam out.
- Microwave at 850w for 2 minutes. Stand for 1 minute and microwave again at 850w for a further 1 minute.
- Stand for 2 minutes before serving.
750w => Cook for 2 minutes. Stand for 1 minute. Cook for 1 minute 20 seconds.
650w => Cook for 2 minutes. Stand for 1 minute. Cook for 1 minute 30 seconds.
Don”t try to cut time short and let food stand. This is key when cooking with the microwave.
Be careful when opening the container, the food will be very hot.
